I apologize for yesterday, life happened. It wasn’t until 9pm that I even made it out to my garden to check how things are progressing. [WARNING – Garden update] There is now 31 [green] tomatoes (that I could find), 3 jalapenos, 2 bell peppers, 5 half-eaten cabbage (thank you, worms…), and an abundance of cucumbers, bush beans, and sugar snap peas. The okra is starting to produce, and my corn is about half as tall as me (if not more).
With that being said – it was harvest time! I got 4 nice sized cucumbers, about a dozen green beans, at least as many sugar snap peas and 4 okra. The cucumbers were washed, thorns removed, and put in the fridge until pickle canning time, the green beans were washed and placed in the fridge as well (going to try out some Dilly Beans), the sugar snap peas were blanched and frozen (they don’t can well), and the okra immediately stored (will most likely pickle some of this as well, delicious!).
As far as the pineapple goes (see Weekend Plans), they are finally starting to ripen! Once they are ready, I still plan on tackling the caramelized pineapple-habanero salsa and Tepache. In the mean time I bought myself a new kitchen gadget (Stainless Steel Pineapple De-Corer, Peeler, and Stem Remover) which I can’t wait to try. I will let you know how it works out!
I’ll try to get back to posting this evening another great recipe – Cowboy Candy! Trust me, its better than it sounds. You will want it on everything.
